  • 240ml chicken broth (low-sodium)
  • 5g salt (plus more to taste)
  • 42g unsalted butter (cubed)
  • 5g fresh thyme (chopped)
  • Black pepper (to taste)

Instructions

  1. In a wide pot, bring the chicken broth and salt to a boil.
  2. Add cauliflower florets, reduce heat, cover, and steam for 20 minutes until fork-tender.
  3. Transfer steamed cauliflower to a food processor using a slotted spoon.
  4. In the same pot, whisk in cubed butter with three tablespoons of hot broth until smooth.
  5. Combine the buttery mixture with cauliflower in the food processor along with thyme and black pepper.
  6. Blend until completely smooth; adjust consistency with additional warm broth if necessary.
  7. Serve warm as an elegant side dish.
