  • ⅔ cup uncooked white rice
  • 3 bell peppers
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • Fresh dill, for garnish
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup water
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 350°F. Cook the rice as per package instructions.
  2. Slice the bell peppers in half and remove seeds; place cut-side up in a baking dish.
  3. In a skillet, heat olive oil over medium heat and cook ground chicken with salt and pepper until no longer pink.
  4. Stir in Italian seasoning, onion, garlic, and zucchini; cook for an additional two minutes.
  5. In a bowl, combine cooked rice with chicken mixture, tomatoes, olives, half of the feta cheese, and dill.
  6. Stuff each pepper with the filling and sprinkle remaining feta on top. Add water to the dish for steaming.
  7. Cover with foil and bake for 40-45 minutes until peppers are tender.
