  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • Optional: diced tomatoes and shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a lined baking sheet for 40–50 minutes until tender.
  2. In a skillet over medium heat, heat olive oil. Add onion and sauté for 3–4 minutes. Add garlic and bell pepper; cook until softened.
  3. Add ground turkey to the skillet; cook for about 6–8 minutes until browned.
  4. Stir in cumin, chili powder, paprika, salt, and pepper.
  5. Mix in corn kernels and optional tomatoes; cook for another couple of minutes.
  6. Slice baked sweet potatoes open lengthwise and fluff their insides with a fork. Spoon in the turkey mixture evenly.
  7. If desired, top with cheese and return to the oven for an additional 5–7 minutes until melted.
