  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic for 2-3 minutes until fragrant.

  4. Stir in diced red bell pepper and spinach; cook for another 2-3 minutes until veggies soften.
  5. Boil diced sweet potatoes in a separate pot until tender (about 10 minutes); drain well.
  6. In a baking dish, layer cooked sweet potatoes followed by the turkey mixture; pour chicken broth over the top.
