  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 3 cloves garlic, minced
  • 1 can (20 oz) pineapple chunks, drained
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, combine chicken pieces with soy sauce, olive oil, honey, garlic, salt, pepper, ginger, and paprika. Allow to marinate for 10–15 minutes.
  2. Spread diced bell peppers, onion wedges, and drained pineapple on a large sheet pan.
  3. Place marinated chicken over the vegetables and pour remaining marinade on top.
  4. Bake for 25–30 minutes or until chicken reaches an internal temperature of 165°F (74°C), stirring halfway through cooking.
