  • 2 cups full fat cottage cheese
  • 4 large eggs
  • 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 ½ cups berries (fresh or frozen blueberries, raspberries, cherries)
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish.
  2. Blend cottage cheese until smooth and creamy.
  3. Add eggs, sweetener, vanilla extract, cornstarch (or coconut flour), and optional lemon zest into the blender; blend until smooth.
  4. Pour the mixture into the prepared baking dish and bake for 10–15 minutes until edges are set.
  5. Carefully add berries on top and return to the oven for another 30–35 minutes until golden and slightly jiggly in the center.
  6. Allow to cool slightly before serving.
