  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for cookie dough)
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)
  • Flaky sea salt (optional)

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix well until smooth. Fold in the chocolate chips.
  2. Line a cutting board or plate with parchment paper. Spread the cookie dough mixture evenly onto the parchment paper to about half an inch thick.
  3. In a small bowl, melt chocolate chips with coconut oil in the microwave in short bursts until smooth.
  4. Pour the melted chocolate over the cookie dough layer and spread evenly. Optionally sprinkle flaky sea salt on top.
  5. Freeze for about 10 minutes until set. Cut into large chunks and enjoy!
