  • 1/4 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 2 eggs (room temperature)
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, mix almond flour, melted coconut oil, maple syrup, and vanilla extract until combined. Press this mixture into a lined 9×9-inch baking pan and bake for about 10 minutes or until lightly golden.
  3. For the filling, whisk together coconut sugar, melted coconut oil, maple syrup, vanilla extract, and room-temperature eggs until smooth. Fold in the chopped pecans.
  4. Pour the filling over the baked crust and return it to the oven for an additional 20–25 minutes or until set.
  5. Allow cooling for at least 30 minutes before chilling in the fridge for an hour. Cut into squares and enjoy!
