  • 1 tablespoon butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tablespoons flour (heaped)
  • 4 cups chicken stock
  • 2 cups cooked turkey
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tablespoon fresh thyme leaves
  • Fresh parsley for garnish

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. If you choose to add bacon or a plant-based alternative, cook until crispy and leave some fat in the pot.
  2. Add leeks, carrots, celery, and thyme; sauté until softened for about five minutes. Stir in garlic and cook for another minute.
  3. Sprinkle in flour and mix well before gradually adding the chicken stock while scraping any bits from the bottom of the pot. Bring to a boil and season with salt and pepper.
  4. Add potato chunks, turkey, and bay leaves; cover and simmer in a preheated oven at 350F for about 45 minutes.
  5. For added richness, stir in cream before serving and garnish with fresh parsley.
