  • 2 carrots
  • 3 cloves garlic
  • 2 lb jackfruit pieces
  • 1 lb gnocchi
  • 1 cup fresh tomatoes
  • 3/4 cup frozen green peas
  • 8 sprigs fresh thyme
  • 6 cups vegetable stock
  • 1/3 cup apple vinegar
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • Sea salt + black pepper to taste
  • 1/3 cup fresh Italian parsley

Instructions

  1. Sauté diced onion and sliced carrots in a pot until the onion is translucent.
  2. Add minced garlic and cook until fragrant.
  3. Incorporate rinsed jackfruit, thyme sprigs, and apple vinegar; simmer until vinegar evaporates.
  4. Whisk whole wheat pastry flour with vegetable stock and add to the pot; stir in smoked paprika and cloves.
  5. Cook for about 45 minutes until jackfruit is tender.
  6. Stir in gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the surface.
  7. Season with salt and pepper to taste before serving with fresh parsley.
