  • 4 bell peppers
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat the oven to 400°F (204°C). Halve the bell peppers lengthwise, remove seeds, and place them cut side up on a baking sheet lined with parchment paper. Brush with olive oil and bake for about 20 minutes.
  2. Meanwhile, microwave the spinach until wilted (15-30 seconds), then chop it. In a bowl, combine spinach with ricotta, mozzarella, parmesan, green onions, basil, eggs, and seasonings.
  3. Fill each pepper half evenly with the ricotta mixture.
  4. In a small bowl, mix breadcrumbs with oil and sprinkle over stuffed peppers.
  5. Bake at 350°F (176°C) for about 30 minutes until golden brown.
