  • 800g lean ground beef (or turkey/chickpeas)
  • 20g butter (or olive oil)
  • 1 tbsp minced garlic
  • 100g chopped white onion
  • 225g mixed bell peppers (red, green, yellow)
  • Salt, pepper, paprika & chili flakes (to taste)
  • 140g light cream cheese
  • 50g shredded mozzarella
  • 34 light cheese slices
  • 240g dry macaroni
  • Fresh parsley for garnish

Instructions

  1. Cook the macaroni in salted water until al dente; reserve 125ml of pasta water before draining.
  2. In a skillet, melt butter over medium heat and sauté garlic, onion, and bell peppers for 4–5 minutes.
  3. Add ground beef or turkey (or chickpeas) and cook for 5–7 minutes until browned; drain excess fat.
  4. Stir in cream cheese, mozzarella, and melting cheese slices until a creamy sauce forms.
  5. Mix in cooked pasta and reserved water until well coated; adjust thickness as needed. Serve hot with parsley.
