  • 4 medium shallots
  • 8 ounces baby bella mushrooms
  • 1 ½ cups chicken broth
  • ½ cup heavy whipping cream
  • ½ cup grated parmesan cheese

Instructions

  1. For crispy shallots, heat vegetable oil in a skillet. Add sliced shallots and fry until golden brown (5-7 minutes). Set aside.
  2. Blanch trimmed green beans in boiling water for 3-4 minutes; transfer to an ice bath.
  3. In the skillet, melt butter, sauté mushrooms until browned, then add garlic and cook for another minute.
  4. Stir in flour to create a roux, then whisk in chicken broth until smooth. Add lemon juice, Dijon mustard, thyme, red pepper flakes (if using), nutmeg, salt, and pepper. Simmer until thickened.
  5. Fold in green beans and half of the parmesan. Transfer to a greased baking dish and top with remaining parmesan and crispy shallots.
