  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, sear the chicken for 3–4 minutes on each side until golden brown. Remove and set aside.
  3. In a bowl, mix BBQ sauce and honey.
  4. In the same skillet, toast uncooked rice for 1-2 minutes while stirring.
  5. Pour in chicken broth and half of the BBQ mixture; stir well.
  6. Return chicken to the skillet and pour remaining sauce over it. Cover and simmer on low for about 15 minutes.
  7. If using mixed vegetables, add them after simmering and cook for an additional 5 minutes.
  8. Let sit for 5 minutes before serving; garnish if desired.
