  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup peaches, finely diced (fresh or canned)
  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter, sugar, and honey until light and fluffy—about 3-4 minutes.
  4. Beat in each egg one at a time until well combined. Then mix in the vanilla extract.
  5. Gradually alternate adding your dry mixture and milk into the wet ingredients until everything is just combined.
  6. Gently fold in the diced peaches.
  7. Divide your batter among the cupcake liners filling them about two-thirds full.
  8. Bake in preheated oven for about 18-22 minutes or until a toothpick comes out clean.
  9. Allow them to cool completely before frosting.
  10. In a mixing bowl, beat together softened cream cheese and butter until smooth.
  11. Mix in honey and vanilla before gradually adding powdered sugar until fluffy.
  12. If desired, mix in peach puree at this stage.
  13. Once cooled completely, frost your cupcakes generously.
