  • 24 oz cream cheese, softened
  • 1 cup granulated sugar

  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; gradually add sugar and vanilla. Add eggs one at a time, mixing on low speed. Fold in sour cream until fully combined.
  3. Pour cheesecake filling over the crust. In another pan, combine diced apples with brown sugar, cinnamon, cornstarch mixed with water, and lemon juice over medium heat until tender.
  4. Layer apple mixture over cheesecake filling. For crumble topping, mix flour, brown sugar, cinnamon; cut in cold butter until crumbly. Sprinkle over apples.
  5. Bake for about 1 hour or until set around edges but slightly jiggly in center. Cool at room temperature before refrigerating for at least four hours.
