  • 100 ml warm water
  • 100 g sour cream
  • 100 g crème fraîche
  • 250 g Hokkaido pumpkin
  • 1 red onion
  • 100 g feta cheese
  • 10 walnuts
  • Fresh thyme for garnish

Instructions

  1. In a mixing bowl, combine flour, olive oil, salt, egg yolk, and warm water. Knead into a smooth dough and let rest for 30 minutes.
  2. Preheat your oven to 220°C (428°F).
  3. In another bowl, mix sour cream and crème fraîche; season with salt, pepper, and nutmeg.
  4. Thinly slice the Hokkaido pumpkin and red onion; crumble the feta and chop the walnuts.
  5. Roll out the dough thinly. Spread the creamy mixture on top, then layer with pumpkin, onion, feta, and walnuts.
  6. Bake on parchment-lined baking sheet for 12-15 minutes until golden brown. Garnish with fresh thyme before serving.
