  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound chicken breasts to an even thickness, season with salt and pepper.
  2. In a large pan, heat olive oil over medium-high heat. Cook chicken for 3-4 minutes on each side until golden brown. Remove from pan and set aside.
  3. In the same pan, sauté minced garlic until fragrant. Add chicken broth, lemon juice, and zest; scrape the pan to incorporate flavors. Bring to a boil then reduce heat.
  4. Stir in heavy cream and let it simmer for about five minutes, then mix in Parmesan cheese until melted.
  5. Add spinach to the sauce until wilted, return chicken to the pan, spooning sauce over it. Cook for an additional two minutes.
  6. Serve garnished with thinly sliced lemon and extra Parmesan.
