  • 4 large eggs (separated)
  • 1 cup granulated sugar (divided)
  • 2 tablespoons cornstarch (or sifted cake flour)
  • 1 tsp vanilla extract (or zest of one lemon)
  • A pinch of salt
  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat the oven to 325°F (160°C) and prepare an 8-inch springform pan with parchment paper.
  2. In a clean bowl, whip egg whites on medium speed until frothy. Gradually add 1/3 cup sugar until stiff peaks form.
  3. In another bowl, whisk egg yolks with yogurt, remaining sugar, cornstarch, vanilla extract (or lemon zest), and salt until smooth.
  4. Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it. Then fold in the remaining egg whites carefully.
  5. Pour the batter into the prepared pan and place it in a water bath. Bake for 50–60 minutes until golden brown and a toothpick comes out mostly clean.
  6. Allow to rest in the oven with the door ajar for 15 minutes before removing.
