  • 1/2 cup evaporated milk
  • 8 tablespoons unsalted butter (divided)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans
  • 1 cup granulated sugar

Instructions

  1. Prepare your baking sheet by lining it with aluminum foil and greasing it with nonstick spray or using a silicone mat.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk. Stir until sugars dissolve completely.
  3. Insert a candy thermometer into the mixture and stir occasionally until it reaches 240°F (soft ball stage).
  4. Remove from heat and add in the cubes of butter without stirring; let it sit for one minute to melt.
  5. Stir in toasted pecans until well combined and the mixture begins to thicken.
  6. Drop spoonfuls onto the prepared baking sheet before the mixture sets. If needed, add boiling water to adjust consistency.
  7. Allow pralines to cool at room temperature for about 30 minutes until hardened.
