  • 1 cup long-grain rice (basmati or jasmine)
  • 1 medium onion
  • 3 cloves garlic
  • 1 bell pepper
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • Olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese
  • Fresh parsley or basil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until browned, about 5-7 minutes. Remove from skillet.
  2. In the same skillet, sauté chopped onion and minced garlic until fragrant. Add diced bell pepper and cook for an additional 2 minutes.
  3. Stir in rice for about a minute before adding drained tomatoes and chicken broth. Bring to a simmer.
  4. Return chicken to the skillet, cover, and reduce heat to low. Cook for 20-25 minutes until rice is tender.
  5. Stir in sliced olives and crumbled feta cheese before fluffing with a fork.
  6. Garnish with fresh herbs before serving.
