  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice

  • 2 cups cooked brown rice, quinoa, or cauliflower rice
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (optional)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt or coconut yogurt
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon honey (optional)
  • 1 small clove garlic, minced (for vinaigrette)
  • ½ teaspoon dried oregano (for vinaigrette)
  • Salt and pepper, to taste (for vinaigrette)

Instructions

  1. Marinate the steak by mixing olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add steak and let it marinate for at least 30 minutes.
  2. Cook the marinated steak on a grill or skillet over medium-high heat for about 4–5 minutes on each side until medium-rare. Let it rest before slicing.
  3. Prepare the tzatziki by combining yogurt (or coconut yogurt) with grated cucumber, lemon juice, minced garlic, dill, salt, and pepper.
  4. Whisk together the lemon vinaigrette ingredients in a small bowl.
