  • 1 lb chicken breast, boneless and skinless
  • 8 oz spaghetti
  • 2 cloves garlic, minced
  • 1/2 cup diced onions
  • 1 cup heavy cream
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and smoked paprika; cook for 6-7 minutes per side until fully cooked. Remove from skillet and slice.
  3. In the same skillet, melt butter and sauté onions and garlic for 2-3 minutes until softened.
  4. Add chicken broth and bring to a simmer; stir in heavy cream and cook for an additional 2 minutes.
  5. Reduce heat; gradually mix in Monterey Jack and Parmesan cheeses until melted.
  6. Toss cooked spaghetti into the sauce until well coated.
  7. Top with sliced chicken and garnish with parsley and crushed red pepper flakes if desired.
