  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1½ cups old-fashioned oats
  • â…” cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (176°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, ground ginger, allspice, cloves, nutmeg, and salt.
  3. In another bowl, mix melted butter and brown sugar until combined. Stir in the egg and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined. Fold in oats and pecans gently.
  5. Chill the dough in the refrigerator for about 15 minutes.
  6. Scoop rounded dough balls onto prepared sheets and bake for 12-15 minutes until slightly golden on the bottom.
  7. Let cool on the sheet briefly before transferring to a wire rack.
