  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1½ cups long-grain white rice (uncooked)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken, garlic powder, onion powder, chili powder, cumin, salt, and pepper; sauté for about 5–6 minutes until mostly cooked.
  2. Stir in uncooked rice and Rotel (juices included); cook for an additional 1–2 minutes.
  3. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes until rice is tender.
  4. Stir in nacho cheese sauce and one cup of shredded cheese until melted and creamy.
  5. Sprinkle remaining cheese on top; cover and let sit for five minutes before serving.
