  • 1 lb turkey sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, heat olive oil and cook the sausage until browned. Remove the sausage but keep the drippings.
  2. Sauté onion and garlic in the same pot until softened.
  3. Stir in tomatoes, chicken stock, basil, oregano, and return the sausage to the pot. Simmer for about 10 minutes.
  4. Add ditalini pasta and cook until al dente (about 8-10 minutes).
  5. Lower heat and stir in heavy cream and Parmesan cheese until melted.
  6. Season with salt and pepper to taste; serve garnished with fresh parsley.
