  • 2 sheets puff pastry
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • Zest from 2 lemons
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare the blackberry jam: Cook blackberries with water, lemon juice, and sugar in a saucepan over medium heat for about 20-30 minutes until thickened. Smash slightly with a fork and let cool.
  2. Thaw and roll out the puff pastry on a floured surface. Spread half of the goat cheese on each sheet and top with blackberry jam.
  3. Cut each sheet into 12 strips. Fold and twist each strip gently to create spiral shapes.
  4. Preheat oven to 400°F (200°C). Brush twists with egg wash and sprinkle with lemon-thyme sugar before baking for 16-18 minutes until golden brown.
