  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh or canned)
  • For the Streusel Topping: ½ cup all-purpose flour
  • ⅓ cup brown sugar, packed
  • ½ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter, cut into small cubes
  • For the Glaze (Optional): ½ cup powdered sugar, 1–2 tablespoons milk or cream, ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour an 8×8 or 9×9-inch baking pan.
  2. For the streusel topping, combine flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until it resembles coarse crumbs; refrigerate.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream butter with granulated and brown sugars until fluffy. Beat in eggs one at a time, then add vanilla and sour cream until smooth.
  5. Gradually mix dry ingredients into wet ingredients until just combined. Fold in diced peaches gently.
