  • 1 cup pecan halves
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 cup granulated sugar
  • 2 large eggs (or egg substitute)
  • 1/2 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, melt butter for the topping and stir in brown sugar, heavy cream, vanilla extract, and salt until smooth.
  3. Arrange pecans in the bottom of the pan and pour the caramel mixture over them.
  4. In one bowl, whisk flour, baking powder, and salt. In another bowl, cream butter with sugar until fluffy; add eggs one at a time and stir in vanilla.
  5. Gradually mix dry ingredients into wet ingredients alternating with milk until combined.
  6. Pour batter over pecan topping and smooth the surface.
  7. Bake for 35–40 minutes or until a toothpick comes out clean.
  8. Cool for five minutes before inverting onto a serving plate.
