  • 2 1/2 tsp pumpkin spice
  • 225 g dark brown sugar
  • 280 g pumpkin purée (room temperature)
  • 75 g vegetable oil (room temperature)
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • 200 g butter (softened)
  • 15 g dark brown sugar
  • 100 g full-fat cream cheese (softened)
  • 345 g powdered sugar (sifted)
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, mix dark brown sugar with pumpkin purée until blended. Add vegetable oil, eggs, and vanilla extract.
  4. Gradually combine dry ingredients with wet ingredients; stir gently until just mixed.
  5. Fill muffin liners about two-thirds full and bake for approximately 23 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool before frosting them with the brown sugar cream cheese mixture.
