  • 1½ cups ricotta cheese
  • 1â…“ cups pumpkin purée
  • 4 sweet onions
  • ½ cup apple cider
  • 2 cups freshly grated mozzarella cheese
  • Fresh sage leaves
  • Cooked chicken

Instructions

  1. Preheat the oven to 400°F (200°C). Roll out puff pastry on a floured surface and place on parchment-lined baking sheets.
  2. In a skillet over medium heat, cook chopped chicken until golden. Remove and set aside.
  3. In the same skillet, add sliced onions with salt and pepper; cook over medium-low heat for about 25–30 minutes until caramelized. Stir in apple cider.
  4. Mix ricotta cheese and pumpkin purée in a bowl with salt and pepper. Spread this mixture within the scored pastry borders.
  5. Layer caramelized onions, shredded mozzarella, and cooked chicken on top.
  6. Scatter fresh sage leaves over the tart edges; brush with egg wash made from whisked eggs mixed with water.
  7. Bake for about 25–30 minutes until golden brown. Serve warm or at room temperature.
