  • 6 tbsp unsalted butter, cold
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk, at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare muffin cups by greasing them or using liners.
  2. In a bowl, mix together cold butter, brown sugar, flour, and salt for the streusel until crumbly.
  3. In another bowl, whisk together 1 3/4 cups of flour, baking soda, salt, and pumpkin pie spice.
  4. In a large bowl, combine melted butter and granulated sugar until smooth. Add eggs one at a time, then mix in vanilla and pumpkin puree.
  5. Gradually fold the dry ingredients into the wet mixture along with buttermilk until just combined.
  6. Fill muffin cups two-thirds full with batter and top generously with streusel.
  7. Bake for about 20 minutes or until golden brown; a toothpick inserted should come out clean.
