  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice (or lemon juice)
  • 2 teaspoons maple syrup (or honey)
  • 2 teaspoons mustard
  • ½ teaspoon salt
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim the woody stems from the halved Brussels sprouts, rinse them under cold water, and pat dry.
  3. In a large bowl, toss the Brussels sprouts with ½ tablespoon of olive oil, salt, and black pepper until well coated.
  4. Arrange the sprouts in a single layer on the baking sheet and roast for 20-25 minutes until they are charred and tender.
  5. Meanwhile, in a jar or bowl, mix together the remaining olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and black pepper to make the dressing.
  6. Once roasted, transfer the Brussels sprouts to a serving platter and drizzle with the dressing before serving.
