  • 1 pound Brussels sprouts (halved)
  • 2 tablespoons extra virgin olive oil (divided)
  • ½ teaspoon salt (divided)
  • 2 teaspoons maple syrup (or honey)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice (or lemon juice)
  • 2 teaspoons mustard
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim and halve the Brussels sprouts, rinse, and pat dry.
  3. In a bowl, toss the sprouts with ½ tablespoon olive oil, ½ teaspoon salt, and black pepper until well-coated. Spread them out on the baking sheet in a single layer.
  4. Roast the Brussels sprouts for 20–25 minutes until crispy on the outside and tender inside.
  5. While roasting, whisk together the remaining olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and black pepper in a jar or bowl.
  6. Once roasted, transfer sprouts to a serving platter and drizzle with the dressing before serving.
