  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic, cut the top off
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter, plus more for greasing the baking dish
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Fresh chives, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and baking until soft.
  3. Grease a 9×13-inch baking dish.
  4. Thinly slice the potatoes using a mandoline for uniform thickness.
  5. Layer the potato slices upright in the dish.
  6. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; mix until well combined.
  7. Squeeze roasted garlic into the mixture and stir.
  8. Pour the creamy mixture over the potatoes.
  9. Cover with foil and bake for 40 minutes.
  10. Remove foil, add remaining cheese on top, and bake uncovered for another 30 minutes until bubbly and golden brown.
  11. Let cool slightly before serving; garnish with fresh chives.
