  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic, top cut off
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roast the garlic wrapped in foil with olive oil and salt for about 40 minutes until soft.
  3. Grease a 9×13-inch baking dish with butter.
  4. Thinly slice the potatoes using a mandoline for uniformity.
  5. Layer potato slices upright in the greased dish.
  6. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until melted without boiling.
  7. Mash roasted garlic into a paste and stir into the cream mixture.
  8. Pour the mixture over the layered potatoes ensuring even coverage.
  9. Cover with foil and bake for about 40 minutes until tender.
  10. Remove foil, add remaining cheeses on top, and bake uncovered for another 30 minutes until golden brown.
  11. Allow to cool slightly before serving.
