  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar

  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup granulated sugar (for salted caramel sauce)
  • 6 tbsp unsalted butter (for salted caramel sauce)
  • 1/2 cup heavy cream (for salted caramel sauce)
  • 1 tsp sea salt (for salted caramel sauce)

Instructions

  1. Preheat the oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan. Bake for about 10 minutes, then let cool.
  2. In another bowl, toss sliced apples with brown sugar, cinnamon, and flour. Spread evenly over the cooled crust.
  3. Beat cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
  4. Pour cheesecake mixture over the apple layer carefully. Bake for 60-70 minutes until slightly jiggly in the center.
  5. Cool completely before refrigerating for at least four hours.
  6. For salted caramel sauce: Melt sugar in a saucepan until amber; stir in butter until melted, then add heavy cream while stirring continuously; finish with sea salt.
  7. Drizzle caramel over slices just before serving.
