  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk (any type)
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  2. In the same pot, melt butter and sauté mirepoix until tender. Add minced garlic and cook for an additional minute.
  3. Stir in chopped baby potatoes along with chicken stock; bring to a boil then reduce heat to simmer until the potatoes are fork-tender.
  4. In another pot, melt butter and whisk in flour; gradually add milk until thickened to create the creamy base.
  5. Combine the creamy mixture with the potato soup, add cheese until melted, then stir back in the cooked sausage.
  6. Season to taste and serve warm.
