  • ½ pound ground turkey
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • Salt and black pepper
  • Nuts for topping: walnuts or pecans

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the acorn squash and scoop out the seeds. Place them cut side down on the baking sheet.
  3. Bake for about 20 minutes until fork-tender.
  4. In a skillet over medium heat, cook ground turkey until browned; set aside.
  5. Sauté onions in olive oil until softened, then add kale, garlic, celery, apples, and herbs; cook for a few more minutes.
  6. Mix the cooked squash flesh into the veggie-turkey mixture and season to taste.
  7. Stuff each squash half generously with the filling and bake for another 15 minutes.
  8. Top with nuts before serving.
