  • 2 acorn squash
  • ½ pound ground turkey
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • Salt and pepper to taste
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese (or goat cheese)

Instructions

  1. Preheat oven to 400°F. Slice acorn squash in half and scoop out seeds.
  2. Place squash cut side down on a lined baking sheet and bake for 20 minutes.
  3. In a skillet over medium heat, cook ground turkey until browned; set aside.
  4. Sauté onion in olive oil until softened; add kale, garlic, celery, and apple until cooked through.
  5. Mix in cooked turkey, fresh herbs, salt, pepper, and some squash flesh.
  6. Fill each squash half with the mixture and return to the oven for another 15 minutes.
  7. Top with feta cheese and nuts; bake for an additional 5 minutes.
