  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Rinse shrimp under cold water and pat dry. Season lightly with salt and pepper.
  2. Prepare vegetables: wash asparagus, slice bell pepper, and trim snap peas. Mince garlic and ginger.
  3. In a bowl, mix soy sauce, cornstarch, and water until smooth.
  4. Heat oil in a skillet over medium-high heat. Sauté garlic and ginger for about 30 seconds.
  5. Add shrimp in a single layer; cook for about 2-3 minutes until golden. Flip and cook another minute until pink.
  6. Remove shrimp from the pan; add asparagus and bell pepper to stir-fry for 2-3 minutes.
  7. Add snap peas; stir-fry for another couple of minutes.
  8. Return shrimp to the pan with the sauce; toss everything together and cook until the sauce thickens (about 1-2 minutes).
  9. Serve over warm rice or noodles.
