  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • ½ cup balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 ½ cups whole cranberries (fresh or frozen)
  • Fresh thyme sprigs

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Pat the beef roast dry and season generously with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat; sear the roast on all sides until browned.
  4. Remove the roast and sauté chopped onions until softened; add minced garlic and cook until fragrant.
  5. Deglaze with balsamic vinegar, scraping up browned bits from the pot.
  6. Stir in beef broth and brown sugar; return the roast to the pot.
  7. Add cranberries and thyme around the roast; cover and transfer to the oven.
