  • 3 tablespoons maple syrup
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • Pinch of salt
  • Optional garnishes: fresh cilantro, lime wedges, toasted coconut flakes, sliced green onions

Instructions

  1. Rinse jasmine rice under cold water until clear. Combine with coconut milk, water, and a pinch of salt in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes. Remove from heat and let steam for another 5 minutes.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper; cook until golden brown (about 6-8 minutes).
  3. In a bowl, whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, garlic, and ginger. Pour over cooked chicken and cook for an additional 2-3 minutes until the sauce thickens.
