  • 1 lb ground beef (80/20)
  • 2 cups fresh spinach (sautéed and chopped)
  • 8 oz low-moisture mozzarella (cut into cubes)
  • 3 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Olive oil (for searing)
  • Salt and black pepper (to taste)

Instructions

  1. Sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted; cool slightly, squeeze out excess moisture, and chop.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and spinach. Mix gently until just combined.
  3. Form meatballs by flattening a portion of the mixture in your palm, placing a cube of mozzarella in the center, and sealing it tightly.
  4. Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides.
  5. Cook through by covering the skillet on low heat for 5–7 minutes or transferring to an oven preheated to 375°F for about 10–12 minutes.
