  • 4 (6-ounce) pieces of salmon
  • 3 cups baby spinach
  • 5.3 ounces feta cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup roasted red peppers
  • 2 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • A pinch of cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) to ensure even baking.
  2. Line a baking sheet with parchment paper and place salmon pieces skin-side down. Cut a pocket lengthwise into each piece without cutting all the way through.
  3. Brush salmon with olive oil and season with salt and pepper.
