  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans, drained and rinsed
  • ½ cup canned corn, drained
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes thoroughly and pierce them multiple times with a fork. Bake directly on the oven rack for 45–50 minutes until fork-tender.
  2. In a skillet over medium heat, heat olive oil and sauté diced onion for about 3–4 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
  3. Add ground turkey to the skillet; cook until browned. Season with smoked paprika, chili powder, cumin, sea salt, and black pepper.
  4. Stir in black beans, corn, and diced tomatoes; simmer for 5–7 minutes.
  5. Once sweet potatoes are done baking, slice them lengthwise and mash slightly to make room for filling.
  6. Spoon turkey mixture into each sweet potato half and top with shredded cheese. Return to the oven for about 5 minutes until cheese is melted.
  7. Garnish with fresh cilantro and serve warm.
