  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot (finely chopped)
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices bread (rye, sourdough, or artisan)

Instructions

  1. Heat a skillet over medium heat and add sliced mushrooms. Cook for 5–7 minutes until moisture evaporates.
  2. Add butter, olive oil, and shallots; sauté for an additional 5 minutes until golden brown.
  3. Stir in thyme, balsamic vinegar (if using), salt, and pepper. Set aside.
  4. Butter one side of each bread slice. On the unbuttered side of half the slices, layer Swiss cheese followed by mushroom mixture and another slice of cheese.
  5. Top with remaining bread slices (buttered side up) and cook in a skillet or panini press over medium heat for about 2–3 minutes per side until golden brown and cheese is melted.
