  • 1 cup uncooked quinoa
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ½ cup chopped peanuts or sunflower seeds
  • 2 tablespoons sesame seeds
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions. Allow to cool completely.
  2. In a large bowl, combine cooled quinoa with red bell pepper, cucumber, carrots, green onions, cilantro, peanuts (or sunflower seeds), and sesame seeds.
  3. In a separate bowl, whisk together soy sauce, lime juice, honey (or maple syrup), sesame oil, ginger, garlic, salt, and pepper until smooth.
  4. Pour dressing over the salad mix and toss gently until well coated.
  5. Chill in the refrigerator for 15-20 minutes before serving to enhance the flavors.
