  • 2 cups chopped pecans
  • 7 oz evaporated milk
  • 0.25 cup butter (cubed)
  • 11 oz vanilla chocolate chips
  • 4 oz vegan marshmallow crème
  • 1 teaspoon vanilla extract

Instructions

  1. In a heavy-bottomed saucepan, combine sugar, evaporated milk, and butter.
  2. Cook over medium heat, stirring constantly until the sugar dissolves completely and the mixture comes to a boil.
  3. Boil without stirring until it reaches 245°F (118°C) on a candy thermometer.
  4. Remove from heat and stir in vanilla chocolate chips until melted and smooth.
  5. Fold in vegan marshmallow crème and vanilla extract.
  6. Add chopped pecans and mix well to coat evenly.
  7. Drop spoonfuls onto a parchment-lined baking sheet and let cool completely.
