  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion (diced)
  • 3 large carrots (cut into chunky pieces)
  • 2 ribs celery (diced)
  • 5 cloves garlic (minced)
  • 1 medium rutabaga (cut into chunky pieces)
  • 4 large potatoes (cut into chunks)
  • ¼ head green cabbage (shredded)
  • 4 cups vegetable stock
  • ¼ cup soy sauce
  • Fresh thyme and rosemary

Instructions

  1. In a large pot, heat oil over high heat. Add vegan beefless tips or mushrooms and sear until golden; remove and set aside.
  2. Lower heat to medium; add onion, carrots, celery, and garlic to sauté until softened.
  3. Sprinkle flour over the veggies and stir to coat, cooking for about a minute.
  4. Gradually add vegetable stock while stirring continuously to avoid lumps.
  5. Incorporate rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, and herbs; stir well.
  6. Bring to a boil then reduce heat and simmer uncovered for about 45-50 minutes until veggies are tender.
  7. Return seared protein back into the pot during the last 10 minutes of cooking.
  8. Serve hot with your choice of bread or on its own.
